Chicken soup

Let's prepare a delicious chicken soup....

Ingredients:

1. Chicken 200gms
2. 3 table spoon corn flour
3. 2 diced onions.
4. 2 green chilli
5. 1 table spoon pepper powder.

Method:

In a small skillet, fry diced onion and green chilli. Then add 500ml of water and chicken and cook it for about 40 minutes. Now add corn flour and pepper powder and cook unitl the flour thicken's a little. Now remove the chicken pieces froom the soup and serve hot.

Pudina (Mint) chicken curry.

Pudina or mint chicken curry is very delicious and is a very good dip for tortillas, chapati's and various sorts of breads. Lets get going....

Ingredients:

1. 3 Table spoon peanut oil or olive oil.
2. Fresh pudina/mint leaves.
3. coriander and curry leaves.
4. 3 table spoon ginger garlic paste.
5. Chppoed onions two.
6. 4 medium sized green chilli.
7. Bay leaf, clove and mustard.


Method:

First make a paste out of mint, coriander, ginger garlic paste and green chilli. Now fry the bay leaf, clove, mustard, curry leaves and onion in a pan using peanut or olive oil. Then add the mint-ginger-garlic paste  and fry until oil separates. now add the chicken and saute till half cooked. Then water for gravy consistency and cook for about 40 minutes in low heat. And then serve hot.

Mudaliar chicken curry

Hi,
I am a software engineer, but I love cooking, especially non veg recipes, it's my hobby to try and experiment my own recipes every weekend. Last weekend I tried preparing Mudaliar chicken curry. Let's see how it's made.

Take 500gms of chicken chopped into really big pieces. Marinate it with rock salt and turmeric powder. Keep aside for about 30 minutes.
Put the marinated chicken into a frying pan and cook it in the convention oven for 30 minutes or until chicken is little crisp but not charred.

Meanwhile prepare curry separately as below.

Fry curry leaves, mustard, basil leaves, diced onion and ginger garlic paste in another pan using peanut oil.
Now add diced tomatoes and stir well until the oil separates from tomatoes. Now add salt, garam Marsala and red chilly powder and stir on low heat. Now add water till the desired gravy thickness is achieved. Let the gravy cook for 10 minutes.

Now add the grilled chicken to the gravy along with the melted chicken fat. The melted chicken fat (chicken stock) really gives you a very good flavor to the gravy. Let it cook for another 15 minutes. Later season it with coriander leaves.

Your tasty mudaliar chicken curry is now ready. Eat well and be well.
